We’ve imported the hottest chilli peppers known to man (The Carolina Reaper). After crushing, we carefully combined them with herbs and our 28-day hung beef, before embarking on a short air-curing period of 4 days.
The result? Something to be taken very seriously. If you think you are up to handling the hottest biltong in the UK, then Billy Tong’s Reaper biltong is your challenge. #billytongreaperchallenge
The heat intensity of chilli peppers is measured universally in Scoville Heat Units (SHU), and our Reaper averages 1.6 million SHU’s. To put this in perspective, our Peri-Peri biltong averages a mere 100,000 SHU’s. Our Cheeky Chilli biltong averages 35,000 SHU’s.
Because of the importation of these very special ingredients, our Reaper biltong is a little more expensive than our normal biltong, and we sell it only in 5 x 100g bags.
